1. Check the roast date: Once a bean leaves the roasting environment, its chemistry immediately begins to change. The bean begins to release carbon dioxide from the roasting process, a process called degassing. As the bean degasses, all those lovely oils begin to oxidise, which diminishes the flavour of your bean.

2. Check for traceability: Be sure you are able to identify where the coffee's origin from them label! You should look for details beyond it's country of production such as the region, the farm's name, in which mill it was processed, who the exporter is and the variety. This will keep you save from sketchy trafficking of low qualities from on country to another and thus extremely low quality!

3. Fruity or Nutty: This is a classic question an experienced barista will ask you! Don't forget coffee is a fruit an can be truly sweet! Don't let these taste intimidate you.. first they might be too acidic but slowly you'll identify different acidities and fruity notes!
