Further down the chain, the ROASTING influences immensely the journey of Bean to Cup too. Green coffee beans themselves have little to no taste at all. The flavour or the aroma of coffee comes from the roasting process in which a large number of chemical reactions take place in those tiny beans resulting molecules that can be perceived by us.
