From the highlands of Nicaragua, Olman Sauceda and his family bring a deep rooted legacy to the specialty coffee world.
With coffee farming embedded in their identity for generations, they have transformed their heritage into a model of quality, independence, and innovation.
Their micro-mill, born from their father's vision in 2016, represents both a tribute to tradition and a bold step forward, allowing full control from cultivation to export while creating opportunities for local employment and value generation at origin.
Their farms, Elite and Altiplano, stretch across 99 hectares between 1,450 and 1,760 meters above sea level, a range that yields coffees with remarkable acidity and aromatic complexity.
With over 140,000 plants in production, they cultivate an impressive range of varieties including Geisha, Pacamara, Villasarchí, Catimor, Chiroso, Pink Bourbon, and Typica.
Each variety is selected not only for its cup potential but also for its adaptability to the terroir, supporting differentiated profiles that meet the expectations of discerning buyers around the world.
The Sauceda family works with a wide spectrum of post-harvest processes, focusing primarily on Naturals and Washed lots, while also experimenting with Honey and Anaerobic methods for small, exclusive batches.
Their approach to picking, based on full day shifts rather than volume, favors careful selection at peak ripeness, a practice that reinforces their commitment to quality over quantity.
Additionally, all pickers are local, reflecting their dedication to community impact and knowledge continuity.
Sustainability is central to their philosophy. They are currently in the process of obtaining organic certification, already complying with EU standards and working with certified inputs. Soil management is ecological, and water use is consciously limited.
