Innovation Rooted in Heritage
Don Sabino
Nestled between the slopes of the Poás and Barva volcanoes in Costa Rica’s Central Valley, Don Sabino Micromill represents a legacy that spans over a century.
As a sixth-generation coffee-producing family, the Sabino team has evolved from traditional coffee growers to pioneers in the specialty segment, combining deep-rooted agronomic knowledge with cutting-edge processing. S
ince their first export in 1919, their identity has been built on passion, honor, and a relentless pursuit of excellence.
Today, the estate covers 133 hectares and boasts over 665,000 coffee plants, cultivated between 1,300 and 1,820 meters above sea level.
This vast and varied terrain allows them to produce a diverse portfolio of high quality lots, featuring varieties like SL28, Geisha, Typica, Mokka, Villa Sarchí, Obatá, Marsellesa, and the Centroamericano hybrids (H1, H10, H17).
Don Sabino’s approach to processing is highly flexible; they specialize in Naturals and Anaerobics but work on-demand to meet client preferences, ensuring consistency in profile and excellence in cup quality.
Harvesting is supported by a seasonal workforce of 60 to 100 pickers, primarily foreign workers who help ensure the timely collection of ripe cherries.
The mill’s regenerative practices, backed by Nespresso certification, reinforce a long-term commitment to sustainability and quality.
Their regenerative model goes beyond certifications; it's a philosophy that embraces soil health, biodiversity, and socio economic balance in the region.
For the Don Sabino family, coffee is more than a product, it is identity, heritage, and a source of deep pride. Seeing their coffees enjoyed abroad brings immense satisfaction, fueling their mission to preserve and grow their niche markets.
Guided by generations of experience, they continue to uphold the values of honesty, passion, and adaptability, ensuring that their micromill remains not only relevant but also respected on the world stage.
